摘要 科技及網際網路的進步改善了生活品質。過去對餐飲業而言,經營成功與否與區位選擇息息相關,好的位置可以增加能見度吸引消費者。然近年外送平台興起和疫情衝擊帶動著外送經濟的成長,讓大眾的消費模式逐漸產生改變。餐飲業者是否會改變經營模式選擇增加外送訂單而變相減少成本選擇遷往巷弄內或離主要街道較遠處設店,是否區位已不再是餐飲業之優先考量,是否區位之重要性逐漸下降。
本研究以臺北市餐飲業店面探討外送經濟與疫情爆發對餐飲業者區位選擇之變化,利用地理資訊系統(GIS)顯示餐飲業店面之空間分布有逐年擴散之現象;蒐集2014年至2021年區位及其他影響變數使用外生變數向量自我迴歸模型(VARX)發現以下兩個結果:餐飲業區位選擇與外送經濟規模呈中高度關聯亦與禁止餐飲業內用之防疫政策呈高度關係、餐飲業區位選擇與外送經濟規模存在雙向因果關係;最後衝擊反應函數反映出後兩個月至三個月短期之區位選擇趨勢與衝擊方向。本研究應證外送經濟發展及疫情均會影響餐飲業者區位之選擇,精華區位之必要性下降,亦對區位理論之延伸提供一些新發現。
Advances in technology have improved our life. In the past, for the catering industry, business success was closely related to location. However, the development of delivery platforms, spurred by the COVID-19 pandemic, has changed consumer behavior. Will the restaurant choose to focus more on delivery orders and move to alleys or locations with less traffic? Is location no longer a priority? Is location still important?
This study explores the effects of the delivery economy and COVID-19 on the location decisions of restaurants in Taipei City in Taiwan. First, we use Geographic Information System (GIS) to indicate that the spatial distribution of restaurants is spreading year by year. Then we collected the location and other macro-economic variables from 2014 to 2021 and applied a model with vector auto-regression with exogenous variables (VARX) for empirical analysis. We found two vital results in our research: 1. location selection is strongly correlated with the delivery economy and COVID-19 policy, and 2. there is a two-way causality between location selection and the delivery economy. Above all, the development of delivery economy and the COVID-19 pandemic has affected the choice of a restaurant’s location, and the importance of location has decreased. It also provides some new findings for the extension of location theory.
